Hold On To Your Hats, The Ride Ain't Over Yet!



Yes, the roller coaster ride of selling our house hasn't ended yet.

We found out yesterday morning that the people who want to buy our house went to close on their town home yesterday.  Unfortunately, the sale didn't go through, based on something to do with the people buying their place.  So our house is back on the market as of today.

The buyers still want our house, but buying it is, of course, contingent on their selling their town home.

So, meanwhile, we are looking for another buyer.

Here we go again.  Woo Hoo!

LOTS of pictures!

We had LOTS of fun on our vacation to Denver.  Now that we are finally home here are some pictures of our trip!

LOTS of anticipation!  
I made the mistake of telling Katelee a couple of days before our trip that we were going on vacation.  She was so excited that she didn't nap for two days!  Whenever she was supposed to be napping, I would go in and ask her what was wrong and why she wasn't sleeping.  Everytime she would reply that she wanted to go on our trip.  It was so funny!  Here she is dragging her bag up the stairs to pack.  She was even excited about that!
LOTS of driving!
We did spend a LOT of time driving in the car.  Katelee is a great traveler, though.  The drive between Salt Lake and Denver is gorgeous and there were lots of interesting things to see: windmills, mines, waterfalls, mountains, desert, trains . . . one of our favorite things, though, were all the tunnels.  Katelee thought they were fun to drive through.

In between all the business we had to take care of and all the driving, we did have lots of fun!  It rained everyday we were there (except for the day we came home) and so our plans to go to a Rockies game and visit the zoo went out the window.  We still managed to have lots of fun.

One thing we did that was so much fun was visit the Denver Downtown Aquarium.  It was by far the biggest aquarium I have ever been to, and really had a lot of fun things to do and see and touch.

LOTS of swimming!
We swam everyday that we stayed in our hotel.  Katelee was hesitant to get in the water the very first time, but once she was in for a few minutes was right back to her usual water-loving self!  Good thing we paid extra money for that water-proof cast!

On our drive home, we decided to stop and see some sights, especially because the weather was beautiful for once.  We stopped at Tiny Town, CO up in a beautiful mountain community.  It was a pretty funny place: an entire village made of tiny buildings.  (Hence the name.)  Katelee had a lot of fun.
Each of the little buildings was furnished inside.  It was fun to see all the little details.  Katelee loved the "dolls" they used as people.

Here is a picture of Gerald and Katelee on the Tiny Town Railroad waiting for the steam engine to start moving.  The most excitement we had during this stop was when the train car we were sitting in de-railed part way through the tour.  It took a few minutes to get going again.  At least it happened on level grassy land, instead of on the rickety rail-less bridge that spans a river...  :0)

No, we did not get lots of sleep on our vacation.  This is what I feel like I need today.

Ten Things I Learned While in Denver

10. Denver is full of wild rabbits. We seriously saw bunny rabbits almost everywhere we went, even downtown. In fact, outside the door of the apartment we leased we saw a rabbit and several squirrels. It was very exciting for Katelee!

9. Graduate school is expensive, and there are no grants available unless you are getting your graduate degree in education. None. Bummer.

8. Even though Denver is supposedly about five times the size of SLC, it doesn't feel like it. It's very spread out, but even downtown doesn't feel that big. I like that.

7. If you look at too many apartments they all start to run together in your mind and then they turn your brain to mush.

6. We have seen about 80 Targets while driving around Denver suburbs, but not a single Wal-Mart. I think I'm in love with this place. ;) We also saw a ton of stores called 'King Soopers.' At first I thought this was a sports store. I don't know why. But once I started seeing them everywhere I began to wonder, and soon discovered that this is a grocery store.

5. University of Colorado, Denver shares it's campus with two other schools. Weird.

4. Most people here are very friendly and helpful.

3. The 'baby blue colorado skies' and the claim that 'the skies are not cloudy all day,' are not necessarily true. At least not all the time. It has been cloudy, overcast, and raining the entire time we have been here.

2. I love the street/address numbering system of Salt Lake and Utah Counties. I simply cannot understand why every city in the world doesn't adopt the same system. It is so logical!

Meal of the Month - May

To make up for being late last month, I decided to post my Meal of the Month early this time!

I got this recipe from my good friend, Jennie, who also happens to be an amazing cook. It is by far our favorite homemade pizza!

Barbecue Chicken Pizza

Pizza Dough:
  • 1 tsp. yeast
  • 1/2 c. plus 1 T. warm water
  • 1 1/2 c. flour
  • 2 tsp. sugar
  • 1 tsp. salt
  • 1 T. extra virgin olive oil

Dissolve yeast in water and set aside for 5 - 10 minutes. Place dry ingredients in mixing bowl; mix well. Make a well in middle and pour in yeast mixture and olive oil. Use wooden spoon to combine ingredients. Lightly oil hands and knead the dough for 5 minutes. When done dough should be slightly tacky. Lightly oil dough ball and interior of glass bowl. Place dough in bowl and seal bowl with plastic wrap; seal airtight. Set aside at room temperature to rise until double, about 1 1/2 to 2 hours. At this point, place in refrigerator until 2 hours before ready to assemble pizza. (I usually do the previous steps the night or day before.) About 2 hours before ready to make pizza, remove dough from refrigerator. Roll dough into a ball and place in glass casserole dish. Seal top of dish with plastic wrap. Set aside at room temperature until double in size, about 2 hours. Place dough on floured surface and using hands or rolling pin press dough down to form a flat circle.

Toppings:

  • 1-2 chicken breasts, cut into cubes
  • 2 T. BBQ sauce (preferably sweet-spicy sauce)
  • 1/2 c. plus a little more BBQ sauce (same as above)
  • 1/2 c. Gouda cheese (sometimes I leave this off, it's optional)
  • 2 c. mozzarella cheese
  • 1/4 small red onion, thinly sliced
  • 2 T. chopped fresh cilantro

Cook chicken over medium heat until done, about 5 to 6 minutes. Coat chicken with 2 T. BBQ sauce. Spread 1/2 c. BBQ sauce evenly over the pizza. Sprinkle Gouda cheese on each pizza. Top with red onion and cilantro. Distribute chicken pieces evenly over both pizzas. Top with mozzarella cheese. Bake pizzas in 500° oven for about 8 minutes.

And for dessert, try these Lemon Bars. They have a really delicious crust that I love!

Crust:
  • 1 c. margarine
  • dash of salt
  • 1/2 c. powdered sugar
  • 2 c. flour
Mix all four ingredients together. It will be crumbly. Press into a 9x9-baking dish. Bake at 350 degrees for 15 minutes or until very lightly browned.

Filling:
  • 4 eggs
  • 2 c. sugar
  • 1/4 c. flour
  • 6 T. lemon juice
Mix ingredients together well in a large bowl. Pour over the baked crust. Bake at 350 degrees for 25 minutes or until set. Sprinkle powdered sugar over the top. Cut and remove from the pan while still warm.

Denver

We have been in Denver now for a couple of days. This trip has been very good for me. Knowing what I'm getting myself into has relieved a lot of the stress I was feeling about the move. The last couple of days have definitely been informative, fun, interesting, eye-opening, (at times) confusing, and exciting.

Since we have been here, we have visited and toured seven apartment complexes. We have found one that we think is 'The One.' We will go back on Tuesday to sign all the papers if we still feel good about it. I am really happy with it; it is a nice little neighborhood and the complex has an amazing park and a pool. Hooray!

Yesterday we went to church. It is crazy to me that in the time we have spent driving all over residential suburbs of Denver, we had never once seen an LDS chapel. I guess this definitely isn't Utah anymore. :) From our Lehi neighhborhood you can see something like six LDS churches... Anyway, we found one online and got driving directions. We left plenty early, but the directions were bad and we got a little lost. We showed up late, but still enjoyed the ward. Katelee especially had fun at nursery. I love how easily she makes new friends!

Today we are heading downtown for some fun. If the weather is good we are going to take in a Rockies game, amongst other things. We'll post pictures when we get home!

And, of course, Katelee's favorite part so far? Swimming in the hotel pool!

I've seen questions like this for kids on other blogs and decided it would be fun to try with Katelee.  It took me a few tries before I got answers to every question; there were so many she would lose interest before we finished.  But I did quote her words exactly.  Enjoy!

FRAMED!

Have I mentioned before that I have the handiest husband ever?  Well, I do.  And it's great.  We save lots of money with his handiness.  For example, last October I bought my first ever 'real' paintings for my home.  I adore them!  I have always wanted some real art to hang in my house.  They really aren't the greatest art ever...just some pictures painted by some unknown student artist.  But I still love them.  I like the textures and they match my house really well.  

Well, to make a long story short, we discovered that to have these babies custom framed was going to cost MORE than the paintings themselves.  Yeah, right.  So we hung them frameless.  Poor things.  This is how they've looked on my wall for the past 8 months.


So, for Mother's Day, Gerald MADE me frames for these paintings.  (With a little help from our oh-so-nice neighbor Jeremy.  Thanks Jeremy!)  Isn't he amazing?  But you want to know the best part?  He bought the supplies for $20 per frame!  WoW!  That just saved us hundreds of dollars.

I LOVE love.

Last Saturday morning we called up Gerald's brother Geoff and invited him and his girlfriend over for dinner.  They said they'd like to come and our plans were made.

A couple of hours later, Geoff called to ask if he could be a little late showing up to our house.  We didn't mind at all, but when Gerald asked Geoff why, he responded,

"I think I'm going to propose today."

HOORAY!

We told Geoff he didn't have to come by for dinner at all, but he insisted they still wanted to.  Lucky us!  So, we had dinner with the newly engaged couple.  Here are some pictures from our day.

All the Places to Love

As a child, I loved being at home.  I felt loved and safe there.  But I always had the need to find special places outside of my house that were private.  These places also felt like a part of home just for me.  When we lived in Sugar City, Idaho, I remember a certain tree I liked to sit under. I felt like the tree was my own special place.  As a young adolescent living in Cedar City, Utah, we had a pair of large bushes in our yard.  I liked to climb in between the bushes and pretend I was a pioneer or read my book or just sit and think.

This tradition didn't stop as I got older.  When I went to BYU my freshmen year, I found several places across campus that became like second homes to me.  There was the certain couch in the Law Library that I napped on so often it felt like my personal living room, the large tree outside of the Maeser building that I loved to sit under and study when the weather was nice.  I even had a certain cubicle in the library that began to feel like my own personal desk.

I miss all of these places, but I am glad I have had the opportunity to discover each one of them.

Because our upcoming move is on my mind, I have been thinking about places I love here and will miss.  Of course, I will miss my little home so much.  But there are other places here that are so full of the emotions of home: Wines Park, the city library, my church building, the streets of this neighborhood that I walk so often with friends or with my family, BYU Campus, the Provo and Mt. Timpanogos temple grounds, Kara and Tiffany's front lawn, Juli's backyard, the Children's museum, my front porch . . . even my local grocery store.  I will miss these places.

I know there are parks and libraries and churches and museums and grocery stores and friends waiting for us in Denver.  For awhile, though, they won't be home.  Yet.  But they will become home with time, and I expect we'll discover even more wonderful places to fall in love with.  I feel excited to add to my list of places to love.

Because I forget.

There are a few sweet little things Katelee has been doing lately that I don't want to forget.

She loves to chair dance while in the car.  We got some kid CD's that we put on while driving; her favorite song by far is 'Girls Just Wanna Have Fun.'  Whenever it comes on we turn it up and she boogies her little heart out (as much as is possible while strapped into a car seat) and sings along.  I love it!

Whenever she wants something these days, she tells us by putting the words "I wish, I wish..." right before it.  For example, "I wish, I wish we could have macaroni and cheese for lunch."  "I wish, I wish I could wear my princess dress to bed."  "I wish, I wish we had a puppy."  You get the  idea.  We think it's very cute!

She is very fascinated with doing tricks with her toes.  For example, she will hold her little baby toe and make it cross over the toe next to it.  Then she'll shout, "Mom!  Mom!  Come look!" She really does do this a lot ... it's pretty funny the things that interest her.

We have to play hide and seek first thing every morning.  If I enter her room before she has had time to hide, I have to leave again so she can hide first.  She always hides in the same place:  under her pillow.  (She is still in a crib, so her options are limited.)  I love walking into her room and seeing her little tummy and feet and toes poking out from under her pillow.  Usually I can see her hair sprawled out, too.  But the pillow effectively covers her head, so she feels completely hidden.  She then giggles while I search her whole room routinely, finally finding her under her pillow - to my great astonishment.  She thinks this game is hilarious.  I'm glad such simple things make her so happy.

She could play "I Spy" for EVER.

She likes to sing songs.  Lately she loves, "Mary Had a Little Lamb."  This is how she thinks it goes: "Mary had a little lamb, it's fleece was white and gold."  Makes me laugh every time.  Tonight as we were singing our Family Home Evening song, "Families Can Be Together Forever," she was singing out loud and clear.  In fact I was so surprised that she was singing so well that I kind of stopped singing to listen to her, just in time to hear, "Families can be together in PARIS!"  I couldn't stop laughing for about 5 minutes.  (Together in Paris - a phrase they use in the movie Anastasia, one of her favorites.)  She likes me to sing a familiar song with one word changed or wrong.  For example, I might sing, "Twinkle, twinkle little car."  Then she laughs hysterically and shows me the right way to sing it.  So simple, yet so entertaining.  :) Lately, she makes up her own songs.  Yesterday while sitting on the toilet, I overheard her sing, "Five little monkeys singing all day long, happy are we, happy are we.  The alligator didn't eat us, happy are we, happy are we!"  Ah, the joy kids provide.

She loves to take her dolls for an outside walk in their stroller.  And, of course, she has to dress up in order to do that.  Love it!  Especially the shoes!

Counting My Blessings

While reading President Monson's recent conference talk, "Be of Good Cheer," the other day, I realized that I needed to focus more on the positive things in my life.  Here is a quote from his talk that really struck me.  

"It would be easy to become discouraged and cynical about the future -- or even fearful of what might come -- if we allowed ourselves to dwell only on that which is wrong in the world and in our lives.  Today, however, I'd like us to turn our thoughts and our attitudes away from the troubles around us and to focus instead on our blessings as members of the Church.  The Apostle Paul declared, 'God hath not given us the spirit of fear; but of power, and of love, and of a sound mind.'"

I have let myself be filled with fear lately; I have been dwelling very negatively on the upcoming changes in my life.  I am sorry.  Today I would like to count some of my many, many blessings.
  • I have the gospel of Jesus Christ in my life, including the companionship of the spirit.  
  • I have a faithful, stalwart, hard-working, loving, funny, kind husband.
  • I have a daughter.  A beautiful daughter who makes me smile every day.
  • I have an extended family who supports me and loves me and I love to be with them.
  • I have a pantry full of good, nutritious food.
  • The weather outside is beautiful, and we have grass to run on and swings to swing on and friends to play with.
  • I can exercise.
  • I have high-speed internet.
  • We sold our house quickly.
  • We won't be homeless during that time after we have to move out of our house and before we move to Colorado.  We have options.
  • We have great educations.
  • Gerald has the opportunity to gain more education.
  • We are surrounded by amazing neighbors.
  • We are part of a ward family that offers us support.
  • The house across the street has the most beautiful yard, including colorful flower gardens, that I can admire from my windows or front porch.
  • I have skills that can support my family financially.
  • I have music in my life.
  • I am in good health.
  • Even though we might not be able to have more children, we can adopt.  What a blessing.
  • I have a comfortable bed.
  • I have access to amazing books to read.
  • I have friends I can call up and talk to for no reason at all.
  • The sun is shining.
Please forgive me for my whining.  I am so blessed.

Fun with Bean Bags

The other day we were bored and decided we needed a project.  I should have cleaned my kitchen or done Katelee's hair.  But, as you can see, I didn't.  Hopefully you can see parts of her face in these pictures.  So, feeling like we needed something to do, I suggested we make Katelee some bean bags out of my scrap material.

Here we are making the bean bags.  Katelee's jobs were: choose the two materials that would make up the bean bag, fill the bean bag with beans after I had sewed three of the sides, spill lots and lots of beans on the floor, and stir the beans while I sewed up the fourth side.  FUN!  She did an awesome job!

Admiring the finished bean bags.  Aren't they cool?  I love how there are not two that are alike; they are all unique and colorful and funky.  Katelee LOVES them.

make a basket by throwing the bean bags into a bowl,
throw the bean bags up the stairs and try to get one on each stair,
hide the beans bags and go on a bean bag hunt,

choose one bean bag, study it, and then mix it amongst the rest.  One person has to find the right one, 

and, of course, catch.  (I call it Hot Potato but catch is what it basically boils down to.  Get it?  Hot Potato?  Boils down to?  Hee hee!  That was a Gerald joke!)  ;)

We are running out of ideas for games to play with our bean bags.  I know there must be tons of great ideas out there - anyone have any suggestions for another great bean bag game?

And the decision is...


Purple!

Yes, that is the color Katelee chose this time for her cast.  (At least it's not bright neon, like her pink one!)

She had the choice of pink, purple, blue, red, or camouflage.  (Camo?  Wouldn't THAT be cool!)

She knew immediately which one she wanted.  She asked for purple and held firm to that choice while we waited for the doctor.

Getting casted went smoothly.  Katelee did a great job.  

The cast should be on for about four weeks, assuming it all heals as it should.  That's better than six weeks, which I originally thought it was going to be.

Way to go, girl!  You look awesome in the purple cast!

Aprons

So, I've really been having fun making aprons lately! I made these two aprons for my moms for mother's day a month or more ago, but I couldn't post them until after Mother's Day or it would've spoiled the surprise. I had fun choosing the materials for them; I feel like each of the aprons really matched them personally.  And for some reason I don't remember, I took the pictures of the aprons before I pressed them, so they look really wrinkled in these pictures.  I did iron them later and they looked much better!

Birthday Acrostic Poem

B - Banner!  My friend Tiffany and her son Jake drew me a beautiful Happy Birthday banner that they hung on my garage.  It was so sweet!

I - Indulge! I indulged myself this year by making myself a chocolate fudge cake with chocolate frosting and chocolate fondant!  (Gerald insisted I didn't have to make my own cake, but I really wanted to!)  Here is how it turned out.  It was sooooo yummy!  


R - Romance! Gerald was so sweet this year on my birthday!  He bought me a romantic movie (Pride and Prejudice) and gave me a pot of purple Calla Lilies, the flowers we had at our wedding.  It was so incredibly thoughtful of him!  He spoiled me with other gifts as well.  Thanks, honey!

So sweet!

T - Telephone calls!  My family all called me on my birthday, as well as many friends.  This is one of my favorite things about a birthday, the opportunity to talk to my loved ones.  My mom and dad even sang a silly song to my answering machine!  ;)  Thanks, guys, it made me laugh! I also had friends I haven't seen in years remember my birthday and call.  Wow, Michelle, I can NOT believe you remembered the date of my birthday...I have a hard enough time remember the birthdays of my immediate family.  Sorry I haven't returned your call yet, but it made my day.  THANKS!

H - Happiness - It was great to spend time with friends and family.  Some of our neighbors and friends came over to share some birthday cake with us that evening.  It was one of my favorite parts of the day!  While they were over visiting, Katelee stuck a sticker in the middle of baby Gracie's head.  Sorry Grace!  But it sure gave us a laugh!  Thanks for being such wonderful friends.


D - Delicious food!  I already told you about the cake, but Gerald also took me to dinner at Los Hermanos, one of my favorite restaurants.  I ate too much, but it was great!  Some of my friends also brought over some treats.  Thanks so much, everyone!

A - Apron - I made myself my own gift. Is that silly? I've been wanting to make myself an apron, so I did. Here is how it turned out. It's a little more pink and frilly than I had expected, but I still like it!
Y - Yell!  Sunday evening when we got together with the Reynolds family for Mother's Day, they all jumped out and yelled "surprise" when we walked into the room.  They had planned a surprise birthday party for me in conjunction with our Mother's Day dinner.  I was certainly surprised!  It was very nice of them to go to all that work for me! 

Wow, this year was such a great birthday, one of the best ever.  I feel so spoiled and so loved.  Thank you to everyone who helped me feel that way!  I love you all.

I feel like I've seriously gone through the stages of mourning about this.  I don't mean to offend anyone who has gone through real mourning; I know that what I'm feeling for my house and for this period of my life is very superficial in comparison to losing a loved one.  But I have had a difficult few days of it.  We decided Saturday night to take the offer.  The new owners want to move in towards the end of June, which is quite a bit sooner than I wanted to move, which made it much, MUCH harder for me to accept.  For awhile I was in denial, trying to pretend that it hadn't happened.  Then I got angry.  Really, really angry.  I was illogically and inexplicably angry at the innocent people buying our house.  Why couldn't they wait to move until August?  I began imagining them living in my house, and I would just get angrier and angrier.  (By the way, I'm sure they are very nice people!  This is just the way I was feeling!)  Then I just got sad.  I cried all the next day at the drop of a hat.  I was so sad to be leaving my house.  And now I have finally come to terms with the whole thing.  I can actually see what a blessing it is, like everyone has been telling me for a couple of days.  I do wish we could stay here until the end of July or beginning of August.  I am extremely stressed out about working out the details of that in-between time.  But it will all work out and at least we sold our house.  We got the full asking price, too, which is really amazing.  I have accepted the inevitable, and am learning to be happy about it.
